1. Preheat oven to 350°F and lightly grease a 9×13-inch baking dish
2. In a large bowl whisk together cream of mushroom soup, chicken broth, and french onion soup mix until smooth
3. Stir uncooked rice into the soup mixture until all grains are coated
4. Pour the rice and sauce into the prepared baking dish and arrange chicken breasts on top
5. Season chicken with salt, pepper and optional garlic powder and thyme
6. Cover the dish tightly with foil and bake for 45–50 minutes until rice is tender and chicken reaches 165°F
7. Remove foil and evenly sprinkle crispy fried onions over the top
8. Bake uncovered for an additional 10 minutes until onions are golden and crunchy
9. Let rest for 5 minutes before serving to allow the sauce to thicken
