Description

This hearty leftover turkey and wild rice soup combines tender turkey, nutty wild rice, and aromatic herbs in a creamy broth for cozy fall evenings. It’s an easy, comforting recipe that transforms holiday leftovers into a nourishing meal.


Ingredients

  • 3 cups cooked turkey, shredded or chopped
  • 3/4 cup uncooked wild rice
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken or turkey broth
  • 1 tsp dried thyme
  • 1/2 tsp dried sage
  • 1 bay leaf
  • salt and black pepper to taste
  • 1/2 cup heavy cream or half-and-half (optional)
  • 2 tbsp fresh parsley, chopped

  • Instructions

    1. Rinse wild rice under cold water and set aside.

    2. Heat olive oil or butter in a large pot over medium heat.

    3. Add onion, carrots, and celery and cook for 5–7 minutes until softened.

    4. Stir in garlic and cook for 1 minute until fragrant.

    5. Add wild rice, thyme, sage, bay leaf, salt, and pepper and toast for 1 minute.

    6. Pour in broth, scrape up any browned bits, and bring to a gentle boil.

    7. Reduce heat to low, cover, and simmer for 40–45 minutes until rice is tender.

    8. Stir in shredded turkey and simmer for 8–10 minutes until heated through.

    9. If using cream, lower heat and stir it in without boiling.

    10. Remove bay leaf, taste, and adjust seasoning.

    11. Ladle into bowls and garnish with fresh parsley.
