1. Rinse wild rice under cold water and set aside.
2. Heat olive oil or butter in a large pot over medium heat.
3. Add onion, carrots, and celery and cook for 5β7 minutes until softened.
4. Stir in garlic and cook for 1 minute until fragrant.
5. Add wild rice, thyme, sage, bay leaf, salt, and pepper and toast for 1 minute.
6. Pour in broth, scrape up any browned bits, and bring to a gentle boil.
7. Reduce heat to low, cover, and simmer for 40β45 minutes until rice is tender.
8. Stir in shredded turkey and simmer for 8β10 minutes until heated through.
9. If using cream, lower heat and stir it in without boiling.
10. Remove bay leaf, taste, and adjust seasoning.
11. Ladle into bowls and garnish with fresh parsley.
