3. Heat 1 tbsp olive oil in a large pot, squeeze roasted garlic into the pot and sauté for about one minute.
4. Add roasted tomatoes and 1 cup of chicken broth, then blend until smooth or partially blended for a chunkier texture.
5. Return soup to medium heat, add remaining broth and simmer for 10 minutes, stirring occasionally.
