2. Add chopped onion, garlic, and leek and sauté for 5 minutes until softened.
3. Stir in carrots, parsnip, celery, and potatoes, cooking 5 minutes to lightly caramelize.
4. Pour in vegetable stock and add dried thyme and bay leaf.
5. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes until vegetables are tender.
6. Add chopped kale and cook for 5 more minutes until wilted.
7. Remove bay leaf, season with salt and pepper, and stir to combine.
