Description

This one-pan cranberry balsamic chicken skillet combines tender seared chicken with a glossy, tangy-sweet cranberry glaze for a cozy, flavorful meal. It’s simple enough for weeknights and elegant enough for seasonal gatherings.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 2 tbsp olive oil
  • 23 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tsp chopped fresh rosemary or thyme
  • salt and pepper to taste

  • Instructions

    1. Pat chicken dry and season with salt and pepper.

    2. Heat olive oil in a skillet over medium heat and sear chicken 5–6 minutes per side until golden.

    3. Reduce heat, add garlic and cook 30 seconds until fragrant.

    4. Pour in balsamic vinegar and scrape up browned bits.

    5. Add cranberries, honey, and chicken broth, stirring to combine.

    6. Return chicken to skillet, spoon sauce over it, cover and simmer 8–10 minutes until chicken reaches 165°F.

    7. Uncover and simmer until sauce is thick and glossy, adjust sweetness or acidity to taste.

    8. Garnish with chopped herbs and serve over mashed potatoes, rice, or vegetables.
