2. Unfold a thawed pastry sheet on a lightly floured surface.
3. Spread cranberry sauce evenly over the pastry, leaving a small border.
4. Arrange brie slices over the cranberry layer.
5. Sprinkle chopped thyme and pecans if using.
6. Starting from one long side, roll the pastry into a tight log.
7. Brush the edge with beaten egg to seal.
8. Wrap the log in plastic wrap and chill for 20–30 minutes.
9. Unwrap and slice the log into 1/2-inch rounds with a sharp knife.
10. Place rounds on the baking sheet, spacing about 1 inch apart.
11. Brush the tops with remaining egg wash.
12. Bake for 15–18 minutes until puffed and golden.
13. Let cool slightly before serving.
