Description

Cranberry Orange Chicken combines tart cranberries, bright orange zest, and juicy chicken in a clean eating dinner perfect for holiday or winter gatherings.


Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh cranberries
  • 1/2 cup pure orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons raw honey
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh chopped rosemary
  • 1/4 cup low sodium chicken broth
  • sea salt and ground black pepper to taste

  • Instructions

    1. Season the chicken breasts with salt, pepper, and half of the orange zest

    2. Heat olive oil in a skillet over medium high heat and sear chicken 2 to 3 minutes per side

    3. Combine cranberries, orange juice, honey, garlic, herbs, broth, and remaining zest in a saucepan and simmer until berries burst

    4. Return chicken to the skillet, pour sauce over the top, and bake at 375°F for 15 to 20 minutes

    5. Let chicken rest, then simmer sauce briefly to thicken before spooning over the chicken
