  • 1 1/2 lb boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1 tbsp orange zest
  • 2 tbsp honey or maple syrup
  • 1/2 cup low sodium chicken broth
  • 2 garlic cloves minced
  • 1 sprig fresh rosemary or 1 tsp dried
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cornstarch mixed with 1 tbsp water (optional)

  • Instructions

    1. Pat chicken dry and season with salt and pepper

    2. Heat oil in a large skillet over medium-high heat

    3. Sear chicken 4–5 minutes per side until golden, then remove

    4. Add garlic to skillet and cook 30 seconds until fragrant

    5. Pour in orange juice and broth, scraping up browned bits

    6. Stir in cranberries, honey, and orange zest, simmer 5 minutes

    7. Return chicken to pan, add herbs, cover and simmer 10–12 minutes

    8. If desired, add cornstarch slurry and cook 2–3 minutes until sauce thickens

    9. Adjust seasoning and serve with sauce spooned over chicken
