These Cranberry Pecan Brie Bites combine flaky puff pastry, creamy brie, sweet-tart cranberry sauce, and toasted pecans for an elegant, easy holiday appetizer. They can be assembled ahead and baked just before serving for stress-free entertaining.

1. Preheat the oven to 375°F (190°C) and lightly grease a mini muffin pan.
2. Flour your work surface and roll out the thawed puff pastry gently to smooth creases.
3. Cut the pastry into 2-inch squares using a sharp knife or pastry wheel.
4. Press each square into the prepared muffin cups, allowing corners to fold over the edges.
5. Place one cube of brie in each pastry cup, keeping the rind on if desired.
6. Top each brie cube with about 1/2 teaspoon cranberry sauce.
7. Sprinkle chopped toasted pecans over the cranberry layer and add rosemary or a drizzle of honey if using.
8. Bake for 12–15 minutes until the pastry is golden brown and the cheese is bubbly, then let cool for 5 minutes before serving.
