1. Heat olive oil or butter in a large pot over medium heat.
2. Add the diced onion celery and carrots and sauté until soft and translucent, about 5 to 7 minutes.
3. Stir in the minced garlic and cook for 1 minute until fragrant.
4. Add cauliflower florets and pour in the broth, bringing the mixture to a gentle boil.
5. Reduce heat and simmer uncovered for 15 to 20 minutes until cauliflower is tender.
6. Remove from heat and blend the soup until smooth using an immersion blender or in batches in a countertop blender.
7. Return the soup to the pot, stir in heavy cream and grated parmesan, season with salt and pepper, and simmer for 5 minutes.
8. Ladle into bowls and garnish with extra parmesan or chopped herbs before serving.
