1. Preheat oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with olive oil.
2. Cook lasagna noodles in salted boiling water until al dente, drain and lay flat.
3. In a bowl, combine shredded chicken, ricotta, half the mozzarella, parmesan, parsley, salt, pepper, and a few tablespoons of Alfredo sauce.
4. Spread a thin layer of Alfredo sauce on the bottom of the baking dish.
5. Place 1/6 of the chicken mixture along each noodle, roll up tightly, and arrange seam-side down in the dish.
6. Pour remaining Alfredo sauce evenly over the rolls and sprinkle with remaining mozzarella.
7. Cover with foil and bake for 20 minutes, then remove foil and bake for 10–12 minutes until bubbly and golden.
8. Let rest 5–7 minutes, garnish with parsley, and serve with garlic bread or salad.
