1. Heat olive oil in a large pot over medium heat
2. Add sliced peppers and onion and cook until softened about 5 minutes
3. Stir in garlic and cook for 1 minute
4. Push vegetables aside and add chicken seasoned with half the fajita seasoning
5. Cook chicken on each side until lightly browned
6. Pour in chicken broth and diced tomatoes with chiles and stir
7. Cover and simmer for 15 minutes until chicken is cooked through
8. Remove chicken, shred with forks, and return to pot
9. Reduce heat to low and whisk in cream cheese until melted
10. Stir in shredded cheese until smooth
11. Pour in half and half and season with remaining fajita seasoning salt and pepper
12. Simmer gently for 5 minutes and serve hot
