1. Slice bell peppers and onion into thin strips and mince garlic.
2. Add chicken breasts, peppers, onion, garlic, diced tomatoes, taco seasoning and chicken broth to the slow cooker. Stir gently.
3. Cover and cook on Low for 6–8 hours or High for 3–4 hours.
4. About 30 minutes before serving, remove chicken and shred with forks. Return shredded chicken to the cooker.
5. Stir in softened cream cheese and shredded cheese until fully melted and smooth.
6. Taste and adjust seasoning with salt, pepper or extra taco seasoning. For thinner soup, add more broth; for thicker soup, cook uncovered for 10–15 minutes.
7. Ladle into bowls and garnish with desired toppings before serving.
