1. Pat chicken breasts dry and season with salt pepper and Italian seasoning
2. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden and cooked through then remove and slice
3. Melt butter in the same skillet and sauté garlic until fragrant
4. Whisk in flour to form a roux then gradually stir in chicken broth until smooth
5. Add heavy cream and simmer gently until sauce thickens
6. Stir in Parmesan cheese until melted into a silky sauce
7. Add gnocchi to the sauce and cook until tender, stirring frequently
8. Return sliced chicken to the skillet and add spinach, sun-dried tomatoes and mushrooms
9. Simmer until everything is heated through and the gnocchi is coated in sauce
10. Stir in fresh parsley and adjust seasoning before serving
