Description

This Olive Garden inspired creamy chicken gnocchi soup combines tender chicken, pillowy gnocchi, fresh spinach and a velvety broth for ultimate comfort. It’s easy to make at home with simple ingredients for a restaurant-quality meal.


Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked, shredded chicken
  • 1 package potato gnocchi (16 ounces)
  • 2 cups fresh spinach
  • 1 teaspoon dried thyme
  • salt and black pepper to taste
  • grated Parmesan cheese for serving

  • Instructions

    1. Heat butter and olive oil in a large pot over medium heat

    2. Add onion, carrot and celery and sauté until vegetables soften

    3. Stir in garlic and cook until fragrant

    4. Sprinkle flour over vegetables and stir to form a roux

    5. Slowly whisk in chicken broth until smooth and bring to a simmer

    6. Pour in heavy cream and add shredded chicken, simmer for 5 minutes

    7. Add gnocchi and cook until they float to the top

    8. Stir in spinach, thyme, salt and pepper and cook until spinach wilts

    9. Remove from heat and ladle into bowls

    10. Top each serving with grated Parmesan cheese
