  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup uncooked orzo pasta
  • 2 cups cooked chicken breast or rotisserie chicken, shredded
  • 2 1/2 cups low sodium chicken broth
  • 1 cup low fat milk
  • 1 cup chopped spinach
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • salt and black pepper to taste
  • juice and zest of 1/2 lemon (optional)

  • Instructions

    1. Heat olive oil in a large skillet over medium heat and sauté onion until softened, about 3 minutes.

    2. Add garlic and Italian seasoning and cook until fragrant, about 1 minute.

    3. Stir in orzo and toast for 1 to 2 minutes until edges turn golden.

    4. Pour in chicken broth and milk, bring to a gentle simmer, and stir occasionally.

    5. After 7 minutes, add shredded chicken and continue to simmer until orzo is tender, about 5 to 7 more minutes.

    6. Stir in spinach and Parmesan cheese until spinach wilts and cheese melts.

    7. Season with salt, pepper, lemon juice, and zest to taste.

    8. Remove from heat and let rest for 2 minutes before serving.
