1. heat olive oil in a skillet over medium heat and sauté onion carrots and celery for 3 to 4 minutes
2. transfer the vegetables to a crockpot and add chicken breasts chicken broth pumpkin puree thyme nutmeg salt and pepper
3. cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is cooked through
4. remove the chicken and shred it with two forks then return the shredded chicken to the crockpot
5. use an immersion blender to blend part of the soup until smooth leaving some chunks for texture
6. stir in the heavy cream and cook on low for an additional 10 to 15 minutes then adjust seasoning before serving
