1. preheat oven to 350°F and grease a 9×13 baking dish with cooking spray
2. in a bowl whisk together cream of chicken soup chicken broth sour cream garlic powder onion powder thyme salt and pepper
3. stir in shredded chicken cooked rice and mixed vegetables until evenly coated
4. mix in half of the cheddar and mozzarella cheese
5. spread the mixture into the prepared baking dish and smooth the top
6. sprinkle remaining cheese and breadcrumbs evenly over the casserole
7. cover with foil and bake for 25 minutes
8. remove foil and bake for an additional 15 minutes until bubbly and golden
9. let rest for 10 minutes before serving to allow the sauce to set
