Description

This creamy chicken and spinach tortellini soup combines tender shredded chicken, cheese filled pasta, and fresh spinach in a rich broth for a comforting, easy weeknight meal. It works on the stovetop or in a slow cooker and reheats beautifully for leftovers.

  • 2 cups shredded cooked chicken
  • 10 ounces cheese tortellini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 3 cloves garlic minced
  • 1 medium onion diced
  • 2 medium carrots sliced
  • 2 stalks celery chopped
  • 1 tablespoon olive oil
  • 1 teaspoon italian seasoning
  • salt to taste
  • black pepper to taste
  • grated parmesan cheese for garnish

  • Instructions

    1. Heat oil in a pot and sauté onion carrots and celery until softened.

    2. Stir in garlic and italian seasoning and cook for one minute.

    3. Pour in broth and add shredded chicken, simmer for 5 minutes.

    4. Add tortellini and cook until pasta is tender.

    5. Reduce heat and stir in heavy cream.

    6. Fold in spinach until wilted and season with salt and pepper.

    7. Ladle into bowls and garnish with parmesan cheese.
