1. Heat olive oil in a Dutch oven over medium heat and cook onion until translucent.
2. Add garlic and cook until fragrant, about 30 seconds.
3. Season chicken with salt, pepper and half the Italian seasoning and sauté until cooked through.
4. Stir in sun-dried tomatoes and remaining Italian seasoning.
5. Pour in chicken broth, bring to a simmer and cook for 10 minutes.
6. Add cheese tortellini and cook until pasta floats, about 3 to 5 minutes.
7. Stir in spinach and cook until wilted.
8. Reduce heat and slowly pour in heavy cream, warming gently without boiling.
9. Adjust seasoning with salt, pepper and red pepper flakes.
10. Serve hot topped with grated Parmesan cheese.
