1. Heat oil or butter in a large pot over medium heat
2. Add onion, carrots, and celery and sauté for 5–7 minutes until softened
3. Stir in garlic and cook for 1 minute
4. Pour in chicken broth and bring to a gentle boil, then reduce to a simmer for 10 minutes
5. Add shredded chicken, italian seasoning, salt, pepper, and red pepper flakes and simmer for 5 minutes
6. Add tortellini and cook for 4–7 minutes until al dente
7. Reduce heat to low and stir in heavy cream, Parmesan, and ricotta until the broth is creamy
8. Add spinach or kale and cook until wilted, about 2 minutes
9. Adjust seasoning as needed
10. Ladle into bowls, garnish with parsley and extra Parmesan, and serve
