1. Cut avocados in half, remove pits, and scoop flesh into a blender or food processor.
2. Add cocoa powder, maple syrup, vanilla extract, and a pinch of sea salt to the blender.
3. Pour in almond milk and optional melted dark vegan chocolate and espresso.
4. Blend on medium-high speed until the mixture is glossy and smooth, pausing to scrape down sides as needed.
5. Taste and adjust sweetness or cocoa intensity by adding more maple syrup or cocoa powder.
6. Transfer mousse to a bowl or individual ramekins and cover.
7. Refrigerate for at least one hour to set and develop a silky texture.
