  • 1 ½ to 2 lbs boneless skinless chicken breasts
  • 3 cups marinara sauce
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • 1 ½ teaspoons Italian seasoning
  • salt to taste
  • pepper to taste
  • 1 ½ cups small pasta (penne rotini or elbow)
  • fresh basil or parsley for garnish

  • Instructions

    1. Trim chicken and chop onion and garlic

    2. Add chicken, marinara, broth, garlic, onion, seasoning, salt, and pepper to crockpot and stir

    3. Cook on low for 6–7 hours or high for 3–4 hours

    4. Remove chicken and shred with forks then return to pot

    5. Stir in uncooked pasta and cook 30 minutes before serving

    6. Pour in heavy cream and stir in parmesan and mozzarella until smooth

    7. Adjust seasoning and serve garnished with basil or parsley
