Instructions
1. Add diced onion and minced garlic to the bottom of the slow cooker and place chicken breasts on top.
2. Drizzle with olive oil, then pour in crushed tomatoes and chicken broth.
3. Sprinkle italian seasoning, red pepper flakes, salt, and black pepper and stir gently.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
5. Remove chicken and shred with two forks, then return shredded chicken to the cooker.
6. Stir in heavy cream, parmesan, and mozzarella until cheeses melt into the soup.
7. If using pasta, cook separately to al dente and stir into the soup before serving.
8. Taste and adjust seasoning, then garnish with fresh basil or parsley.
