Description

This creamy garlic chicken skillet combines tender chicken breast with a rich garlic cream sauce and fresh kale for a comforting, flavorful dinner. It’s quick to prepare and perfect for busy weeknights.


Ingredients

  • 4 boneless chicken breasts
  • 4 cloves minced garlic
  • 1 cup light cream
  • 2 cups chopped kale
  • 2 tablespoons unsalted butter
  • 1 can cream of chicken soup
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • 1 teaspoon dried thyme
  • pinch chili flakes

  • Instructions

    1. Pat chicken dry and season with salt pepper and dried thyme

    2. Heat olive oil and 1 tablespoon butter in a skillet over medium high heat

    3. Sear chicken 4 to 5 minutes per side until golden then remove

    4. Reduce heat to medium and add remaining butter and minced garlic stirring 30 seconds

    5. Stir in cream of chicken soup then whisk in light cream until smooth

    6. Add kale handful by handful stirring until wilted

    7. Return chicken to skillet and simmer 8 to 10 minutes until cooked through and sauce thickens

    8. Taste and adjust seasoning adding more salt pepper or a squeeze of lemon if desired

    9. Serve hot over mashed potatoes pasta or with crusty bread
