  • 8 ounces fresh mushrooms, sliced
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 4 ounces cream cheese, softened
  • 3/4 cup milk or half-and-half
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1 teaspoon fresh thyme or parsley
  • 1/2 cup whole wheat breadcrumbs or crispy onions
  • sea salt and pepper to taste

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease a 9×13-inch casserole dish.

    2. Blanch green beans in boiling salted water for 3-4 minutes, then transfer to an ice bath and drain.

    3. In a large skillet, melt butter over medium heat and cook onion until translucent, about 5 minutes.

    4. Add garlic and mushrooms, cooking until the mushrooms release their liquid and it evaporates.

    5. Stir in cream cheese until melted, then whisk in milk and broth; simmer until sauce thickens.

    6. Toss blanched beans with the sauce in the skillet and season with salt, pepper, and herbs.

    7. Transfer mixture to the prepared dish and top evenly with breadcrumbs or crispy onions.

    8. Bake for 25-30 minutes until the topping is golden and the casserole is bubbly.
