Description

This homemade casserole features fresh green beans in a velvety cream sauce topped with a golden, crispy onion crust. It delivers rich, comforting flavor without any canned shortcuts.

  • 1 pound fresh green beans, trimmed and cut
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all purpose flour
  • 1 cup chicken broth
  • 1 cup milk or half-and-half
  • 1/2 cup cream cheese
  • 1/2 cup grated Parmesan or cheddar (optional)
  • 1 cup fried onions or breadcrumbs
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon paprika
  • salt and pepper to taste

  • Instructions

    1. Preheat oven to 375°F.

    2. Bring a pot of salted water to a boil, add green beans and cook 3 minutes, then plunge into ice water and drain.

    3. In a large skillet, melt butter with olive oil over medium heat, add mushrooms and cook 5 minutes until browned.

    4. Add onion and garlic to the skillet and cook 2–3 minutes until fragrant.

    5. Sprinkle flour over vegetables and stir for 1 minute to form a roux.

    6. Slowly whisk in chicken broth and milk, simmer until sauce thickens and coats the back of a spoon.

    7. Stir in cream cheese, nutmeg, paprika, salt and pepper until smooth.

    8. Fold drained green beans and optional cheese into the sauce.

    9. Transfer mixture to a 9×13-inch baking dish and smooth the top.

    10. Sprinkle fried onions or breadcrumbs over the casserole.

    11. Bake for 25–30 minutes until bubbling and golden, tenting with foil if topping browns too fast.

    12. Let rest 10 minutes before serving.
