1. Heat olive oil in a large nonstick skillet over medium heat.
2. Add chopped onion and garlic and cook 2–3 minutes until translucent.
3. Stir in shredded chicken, chili powder, cumin, salt, and pepper and cook 2 minutes.
4. Pour in enchilada sauce and warm through, then gently stir in Greek yogurt until smooth.
5. Add black beans, corn, and tortilla strips and stir to coat in the sauce.
6. Sprinkle shredded cheese over the top and cover skillet, simmering 3–5 minutes until cheese melts.
7. Remove from heat and garnish with cilantro, avocado, lime wedges, and jalapeno slices as desired.
8. Serve hot directly from the skillet.
