3. Pour in chicken broth, bring to a simmer, and cook, stirring occasionally, until orzo is nearly al dente.
4. Stir in lemon juice, lemon zest, salt, and pepper and continue cooking until the liquid thickens.
5. Add shredded rotisserie chicken and spinach, stirring until the spinach wilts and chicken is heated through.
6. Remove from heat and stir in light cream or Greek yogurt and grated cheese if using.
