Description

Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon fresh chives, chopped
  • salt and black pepper to taste

  • Instructions

    1. Pat chicken dry and season with salt and pepper.

    2. Heat oil in a skillet over medium-high heat and sear chicken until golden, about 4–5 minutes per side; remove and set aside.

    3. Add mushrooms to the skillet and cook undisturbed until golden, then stir in garlic and cook 1 minute.

    4. Pour in chicken broth and scrape up browned bits, then stir in cream and parmesan until sauce is silky.

    5. Return chicken to skillet and nestle into sauce, then add spinach and simmer 5–7 minutes until chicken is cooked through and sauce thickens.

    6. Garnish with chives and serve directly from the skillet.
