  • 2 boneless skinless chicken breasts, sliced
  • 12 oz pasta (penne, rotini, or spaghetti)
  • 1 can (14 oz) canned artichoke hearts, drained and quartered
  • 1/2 cup pesto sauce
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups chicken broth
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil or parsley
  • 1 tablespoon lemon juice

  • Instructions

    1. Heat olive oil in a large sauté pan over medium-high heat.

    2. Add sliced chicken in a single layer and sear for 3–4 minutes per side until golden and cooked through, then transfer to a plate.

    3. Lower heat, add minced garlic to the pan and sauté for 30 seconds until fragrant.

    4. Stir in pesto and warm briefly to release its aroma.

    5. Pour in heavy cream and chicken broth, whisking to create a smooth sauce.

    6. Return chicken and any juices to the pan and simmer for 2–3 minutes.

    7. Add uncooked pasta and artichoke hearts, stirring to submerge noodles.

    8. Cover partially and cook for 10–12 minutes, stirring occasionally and adding extra broth if needed.

    9. Turn off heat and stir in Parmesan until melted.

    10. Finish with lemon juice and chopped basil, then serve straight from the pan.
