1. Lightly coat the crockpot with olive oil or cooking spray and layer the diced onion and minced garlic at the bottom.
2. Place the chicken breasts or thighs on top of the aromatics in the crockpot.
3. Pour in the crushed tomatoes then season with salt, black pepper and Italian seasoning, stirring gently to combine.
4. Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender and easily shredded.
5. About 20 minutes before serving stir in the heavy cream or alternative and whisk lightly to prevent curdling and create a silky sauce.
6. Add the chopped basil and optional spinach, allowing them to wilt as the sauce thickens.
7. Shred the chicken slightly to absorb more sauce, then garnish with extra basil or Parmesan before serving.
