Description

This dairy free version of classic Tuscan chicken gnocchi delivers a velvety coconut-cashew sauce coating tender chicken and pillowy gnocchi. It’s a cozy, wholesome dinner that feels indulgent without any dairy.


Ingredients

  • 2 medium chicken breasts sliced
  • 1 package potato gnocchi dairy free
  • 1 cup light coconut milk
  • 1/2 cup raw cashews soaked and blended
  • 1 cup baby spinach
  • 1/3 cup sun dried tomatoes chopped
  • 3 garlic cloves minced
  • 1 teaspoon italian herb mix
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • nutritional yeast optional

  • Instructions

    1. Season the chicken with salt pepper and italian herb mix

    2. Heat olive oil in a skillet over medium heat and brown the chicken until cooked through then remove

    3. Boil gnocchi in salted water until they float then drain and set aside

    4. In the same skillet sauté garlic until fragrant then add sun dried tomatoes

    5. Pour in coconut milk and blended cashew mixture and whisk over medium low heat until sauce thickens

    6. Return chicken and gnocchi to the skillet and toss to coat with sauce

    7. Stir in baby spinach until just wilted then adjust seasoning and serve hot
