Tuscan-Style Roast Beef

Description

This Tuscan-style roast beef features a garlic and herb crust and is slow-roasted to tender perfection. It makes a festive and comforting main course for an Italian-inspired holiday dinner.


Ingredients

  • 1 (3 lb) beef top round roast
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp olive oil
  • 1/2 cup red wine
  • 1 tsp coarse sea salt
  • 1/2 tsp black pepper

  • Instructions

    1. Preheat oven to 375 degrees F (190 degrees C).

    2. In a small bowl, combine garlic, rosemary, thyme, olive oil, salt, and pepper.

    3. Rub the herb mixture evenly over the surface of the beef roast.

    4. Place roast on a rack in a roasting pan and insert into the oven.

    5. Roast for 1 hour 15 minutes, then pour red wine into the pan.

    6. Continue roasting for an additional 15 minutes or until internal temperature reaches 130 degrees F for medium-rare.

    7. Remove roast from oven and let rest for 10 minutes before slicing.

    8. Slice thinly and serve with pan jus.
