Instructions
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a small bowl, combine garlic, rosemary, thyme, olive oil, salt, and pepper.
3. Rub the herb mixture evenly over the surface of the beef roast.
4. Place roast on a rack in a roasting pan and insert into the oven.
5. Roast for 1 hour 15 minutes, then pour red wine into the pan.
6. Continue roasting for an additional 15 minutes or until internal temperature reaches 130 degrees F for medium-rare.
7. Remove roast from oven and let rest for 10 minutes before slicing.
8. Slice thinly and serve with pan jus.
