1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
2. Pat zucchini slices dry with paper towels to remove excess moisture.
3. In a shallow bowl, combine parmesan, breadcrumbs, salt, pepper, garlic powder and paprika.
4. Drizzle zucchini slices with olive oil in a separate bowl and toss to coat evenly.
5. Press each zucchini slice into the parmesan-breadcrumb mixture, coating both sides and shaking off excess.
6. Arrange coated slices in a single layer on the prepared baking sheet without overcrowding.
7. Bake for 18–22 minutes, flipping slices halfway through, until golden and crispy.
8. Let chips cool slightly on the baking sheet before serving and sprinkle with extra parmesan if desired.
