1. Preheat oven to 400°F and line a baking sheet with parchment or spray with cooking spray.
2. In a bowl whisk together honey, Dijon mustard, whole grain mustard, olive oil, garlic powder, salt, and pepper.
3. Place chicken in a shallow dish, pour half the sauce over it, turn to coat, cover and refrigerate for 20–30 minutes.
4. In another bowl combine breadcrumbs, crushed pretzels, and paprika.
5. Remove chicken from marinade, let excess drip off, then coat evenly in breadcrumb mixture.
6. Arrange coated chicken on baking sheet and bake for 20–25 minutes, flipping halfway, until internal temperature reaches 165°F.
7. During the last 5 minutes, brush remaining sauce over chicken and return to oven to caramelize.
8. Let chicken rest 5 minutes before serving to keep it juicy and crisp.
