1. preheat the oven to 400°F and place a wire rack on a lined baking sheet
2. whisk honey, dijon mustard, olive oil, garlic powder, salt and pepper in a bowl
3. toss chicken pieces in the honey mustard mixture until coated and let sit 20–30 minutes
4. transfer bread crumbs to a shallow dish and press marinated chicken into crumbs
5. arrange coated chicken on the wire rack and brush with a little olive oil
6. bake breasts for 20–25 minutes or thighs for 30–35 minutes until internal temperature reaches 165°F
7. remove from oven and let rest 5 minutes before serving
