Crispy Parmesan Yellow Squash Fritters

Description

Golden, crispy fritters made with fresh yellow squash, Parmesan cheese, and simple seasonings. Perfect as a snack, side dish, or light meal.


Ingredients

  • 3 medium yellow squash (about lbs), grated
  • ½ cup grated Parmesan cheese
  • ½ cup all-purpose flour
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tbsp chopped green onion or chives
  • 1 tsp salt, divided
  • ½ tsp black pepper
  • 23 tbsp cooking oil (olive or vegetable)

  • Instructions

    1. Trim ends of squash and grate using a box grater.

    2. Place grated squash in a colander, sprinkle with ½ tsp salt, and let sit 10–15 minutes.

    3. Squeeze out excess liquid from squash using a clean towel or paper towels.

    4. In a bowl, combine drained squash, Parmesan, flour, egg, garlic, green onion, remaining ½ tsp salt, and pepper; stir until just combined.

    5. Heat oil in a skillet over medium heat until hot.

    6. Scoop 2 tbsp of batter and form into patties; place in skillet without crowding.

    7. Cook fritters 2–3 minutes per side until golden brown and crispy.

    8. Transfer cooked fritters to a paper towel–lined plate or cooling rack.

    9. Repeat with remaining batter, adding oil as needed.
