Description

This slow cooker stir fry combines tender chicken and crisp garden vegetables in a savory sauce served over fluffy rice. It offers a hands-off, wholesome weeknight meal with minimal prep and maximum flavor.


Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized chunks
  • 1/2 cup low-sodium soy sauce
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cups mixed bell peppers, sliced
  • 2 cups broccoli florets
  • 1 cup thinly sliced carrots
  • 1 cup snap peas
  • 1 medium onion, sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 4 cups cooked rice
  • green onions and sesame seeds for garnish

  • Instructions

    1. Combine soy sauce, garlic, ginger, honey, and sesame oil in a bowl to make the sauce

    2. Place chicken in the slow cooker and pour the sauce over it

    3. Add carrots and broccoli on top of the chicken and cook on low for 4 hours

    4. Stir in bell peppers, snap peas, and onion and continue cooking on low for 30 minutes

    5. Mix cornstarch and cold water then stir into the slow cooker and cook for an additional 15 minutes to thicken the sauce

    6. Spoon the chicken and vegetables over cooked rice and garnish with green onions and sesame seeds
