  • Total Time: 4 hours 30 minutes
  • Yield: About 64 small marshmallows 1x

Description

Fluffy homemade marshmallows shaped and decorated to resemble the iconic Stay Puft Marshmallow Man—perfect for movie night snacks or Halloween treats.

Ingredients

Scale
  • 3 packets unflavored gelatin (about 21g)
  • 1 cup cold water, divided
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup (or golden syrup)
  • ¼ teaspoon salt
  • 1 tablespoon vanilla extract
  • Powdered sugar, for dusting
  • Cornstarch, for dusting
  • Food coloring or edible markers, optional for decoration

  • Instructions

    1. Grease a 9×13-inch pan and dust with a mixture of powdered sugar and cornstarch.

    2. In the bowl of a mixer, sprinkle gelatin over ½ cup cold water and let bloom for 10 minutes.

    3. In a saucepan, combine granulated sugar, corn syrup, salt, and remaining ½ cup water. Heat over medium-high, stirring until sugar dissolves.

    4. Attach a candy thermometer and cook syrup without stirring until it reaches 240°F (soft-ball stage).

    5. With mixer on low, slowly pour hot syrup into bloomed gelatin. Increase speed to high and whip 10–12 minutes until white and fluffy.

    6. Add vanilla extract and whip 1 minute more to combine.

    7. Spread marshmallow mixture into prepared pan, smoothing the top. Let set at room temperature for 4–6 hours or overnight.

    8. Dust cutting surface with powdered sugar mixture. Turn marshmallow slab out and cut into shapes or squares.

    9. Dust all sides of each marshmallow with the sugar–cornstarch mix to prevent sticking.

    10. Optional: Decorate marshmallows with food coloring, icing, or edible markers to add Stay Puft details.
