  • Instructions

    1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with liners.

    2. Whisk flour, baking soda, cinnamon, nutmeg, and salt in a bowl.

    3. Beat eggs, sugar, oil, and vanilla in a separate bowl until glossy.

    4. Fold grated carrots and pineapple into the wet mixture, then stir in dry ingredients until just combined.

    5. Divide batter among liners, filling each two-thirds full.

    6. Bake 18–22 minutes until a toothpick comes out clean, then cool in pan 5 minutes before transferring to a rack.
