  • 8 large eggs
  • 1 cup fresh asparagus, chopped
  • 3 oz goat cheese, crumbled
  • 1/4 cup milk or cream
  • 1 tbsp olive oil or melted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 2 tbsp chives or green onions, chopped

  • Instructions

    1. Preheat oven to 350°F (175°C) and grease an 8×8 inch ceramic baking dish.

    2. Rinse and trim asparagus, then chop into 1/2-inch pieces.

    3. Heat olive oil in a skillet over medium heat and sauté asparagus for 2–3 minutes until tender, then let cool.

    4. In a bowl whisk eggs, milk, salt, pepper, and garlic powder until frothy.

    5. Fold in sautéed asparagus and half of the goat cheese crumbles.

    6. Pour mixture into the prepared baking dish.

    7. Sprinkle remaining goat cheese and chives on top.

    8. Bake for 22–25 minutes until eggs are set but still tender.

    9. Let rest for 5 minutes before slicing and serving.
