  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian herbs
  • 2 tbsp olive oil for greasing

  • Instructions

    1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or brush with olive oil.

    2. In a large bowl combine ground chicken, breadcrumbs, Parmesan, garlic, parsley, salt, pepper, Italian herbs, and egg until just mixed.

    3. Portion the mixture into 1 to 1½ inch balls using a scoop or spoon and roll gently between your palms to form meatballs.

    4. Place the meatballs on the prepared baking sheet, leaving space between each one.

    5. Bake for 18 to 20 minutes until golden brown and an internal temperature of 165°F (74°C) is reached.
