Easy Chicken and Caprese Salad with Balsamic Flavor

Description

This fresh and colorful salad pairs juicy grilled chicken with creamy mozzarella, ripe tomatoes, and a tangy homemade balsamic dressing. It’s a simple yet satisfying meal perfect for weeknight dinners or light lunch.


Ingredients

  • 2 boneless skinless chicken breasts
  • 6 oz fresh mozzarella balls
  • 2 ripe tomatoes, sliced
  • 1 cup mixed greens or arugula
  • 1/4 cup fresh basil leaves
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 clove garlic, minced
  • salt and pepper to taste

  • Instructions

    1. In a bowl whisk 1 tbsp olive oil, 1 tbsp balsamic vinegar, garlic, salt and pepper then coat chicken and marinate 20 minutes.

    2. Heat grill pan over medium-high heat, brush with oil and grill chicken 5-6 minutes per side until 165°F internal temperature.

    3. Let chicken rest 5 minutes then slice into strips.

    4. Arrange greens on a platter, layer tomato slices, mozzarella, basil leaves and sliced chicken.

    5. Whisk remaining olive oil, balsamic vinegar and honey in a small bowl to make dressing.

    6. Drizzle dressing over salad and garnish with extra basil before serving.
