This quick and wholesome chicken and broccoli stir-fry is perfect for busy weeknight dinners. Tender chicken and crisp broccoli are coated in a savory sauce for a balanced, flavorful meal ready in minutes.

1. Slice the chicken thinly against the grain for even cooking.
2. Bring a pot of water to a boil, add broccoli florets and blanch for 45 seconds, then drain and shock in ice water.
3. In a bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch and chicken broth until smooth.
4. Heat a wok or large skillet over medium-high heat and add vegetable oil.
5. Add the chicken in a single layer and cook undisturbed for 1–2 minutes, then stir until golden and cooked through, about 4–5 minutes. Remove and set aside.
6. Add garlic and ginger to the wok and stir for 15–20 seconds until fragrant.
7. Add blanched broccoli and any optional vegetables and stir-fry for 2 minutes until crisp-tender.
8. Return the chicken to the wok and pour in the sauce, stirring to coat all ingredients.
9. Cook for 2–3 minutes until the sauce thickens and glazes the chicken and vegetables.
10. Serve immediately over rice or noodles and garnish if desired.
