  • 2 cups shredded cooked chicken
  • 3 cups cauliflower rice
  • 3 large eggs, whisked
  • 1 1/2 cups mixed vegetables (peas, carrots, corn)
  • 3 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 cup shredded light cheese
  • 1 tablespoon olive oil
  • 2 green onions, sliced
  • salt and pepper to taste

  • Instructions

    1. preheat oven to 375°F and grease a 9×13 inch baking dish

    2. heat olive oil in a skillet over medium heat and sauté garlic until fragrant

    3. add mixed vegetables and cook until softened

    4. stir in cauliflower rice and cook until moisture evaporates

    5. remove skillet from heat and transfer mixture to a bowl

    6. add shredded chicken soy sauce salt pepper and whisked eggs and stir to combine

    7. pour mixture into baking dish and spread evenly

    8. sprinkle shredded light cheese over the top

    9. bake uncovered for 20 to 25 minutes until edges are crispy and cheese is golden

    10. let stand for 5 minutes then garnish with green onions and serve warm
