1. preheat oven to 375°F and grease a 9×13 inch baking dish
2. heat olive oil in a skillet over medium heat and sauté garlic until fragrant
3. add mixed vegetables and cook until softened

5. remove skillet from heat and transfer mixture to a bowl
6. add shredded chicken soy sauce salt pepper and whisked eggs and stir to combine
