1. preheat oven to 375°F and grease a 9×13 inch casserole dish
2. heat olive oil in a skillet over medium heat
3. add onion, garlic, carrots and peas and sauté until vegetables are tender, about 5 minutes
4. stir in cauliflower rice and cook 3 minutes more, letting excess moisture evaporate
5. add shredded chicken and soy sauce, stir to combine
6. lightly scramble eggs in a bowl and fold into the cauliflower and chicken mixture
7. transfer mixture to the casserole dish and spread evenly
8. season with salt, pepper and optional red pepper flakes
9. bake uncovered for 20–25 minutes until top is golden and edges crisp
10. let rest 5–10 minutes before serving
