Description
These bite-sized chicken Parmesan meatballs are baked and topped with marinara sauce and melted mozzarella for an easy, comforting weeknight meal.

Instructions
1. Preheat oven to 400°F (200°C).
2. Combine ground chicken, breadcrumbs, Parmesan, garlic, Italian seasoning, parsley, egg, salt, and pepper in a bowl and mix gently.
3. Chill mixture in refrigerator for 10 minutes.
4. Portion mixture into 1.5-inch meatballs, optionally pressing mozzarella cubes in center.
5. Place meatballs on parchment-lined baking sheet and brush with olive oil.
6. Bake 18 minutes or until golden and internal temperature reaches 165°F (74°C).
7. Spread half of the marinara sauce in a baking dish, add meatballs, spoon remaining sauce over and top with shredded mozzarella.
8. Bake 10 minutes more or broil for 2–3 minutes until cheese is bubbly.
9. Let rest 5 minutes before serving.
