1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish with olive oil.
2. In a bowl whisk together the cream of mushroom soup chicken broth salt black pepper garlic powder onion powder and dried thyme.
3. Spread the uncooked rice evenly in the prepared baking dish.
4. Pour the soup mixture over the rice and stir gently to coat all the grains.
5. Arrange the chicken breasts on top of the rice and drizzle with the remaining olive oil.
6. Cover the dish tightly with aluminum foil and bake for 45–55 minutes until the rice is tender and the chicken reaches 165°F (74°C).
7. Remove the foil and bake uncovered for an additional 5–10 minutes to lightly brown the top.
8. Let the casserole rest for 5–10 minutes before serving to allow the rice to absorb remaining sauce.
