2. In a food processor combine chickpeas, cocoa powder, nut butter, maple syrup, vanilla, and salt; blend until smooth.
3. If mixture is too thick, add 1–2 teaspoons plant-based milk and blend until creamy.
4. Use a spoon or small scoop to portion mixture and roll into balls between your palms.
5. Roll each ball in cocoa powder, shredded coconut, or crushed nuts to coat.
6. Place truffles on the prepared tray and refrigerate for at least 30 minutes to firm up.
7. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 1 month.
